There was a very, very long thread here recently about eating in Amsterdam. I'm not sure how one finds things that have gone off the board but that would have some good suggestions for you. I found a rice table dinner in Amsterdam very romantic, but I'm sure there are lots of other restaurants that will fit the bill.
