To bring the conversation back to EY:

1) AMEX Cent followed by Plat have the best EY fares in the market. I know this from senior Australian based sources at EY.

2) AMEX Travel have an International Airline Program that discounts J and F fares by 20%. This is on top of best fares in the market.

Looking at EU-SYD flights for Summer AMEX Travel was cheaper than EY direct and had more dates available for their discount fares.

You also get Hilton, Radisson Gold and Hertz PC as well as the travel insurance.

No Australian card offers such a flexible currency for transfers so I always recommend it to friends for this very reason.
As an Amex Cardholder, I've noticed the IAP prices are being regularly beaten by the online fares direct with the airline so do always check, the rest of what you've written is spot on and why I retain my card

To the OP make sure you can actually use the miles you're earning for what you want, it is worth setting up links from you MR account to all the airline and hotel currencies you may use so you can quickly transfer them when needed - keep your MR points in Amex though until you need them or a special bonus offer comes along as you might not just shove them to EY after all
