I have stayed at both St. Regis properties as well as the Ritz Carlton. My recommended order of preference for your situation would be:

1. RC (try to get a club room upgrade if you can and also visit the Sheikh Zayed Mosque it is an incredible piece of architecture). The RC is also closest to the airport.
2. St Regis Saadiyat Island (tends to be more expensive than the other St Regis but lovely rooms). Not much to do around there as you will be away from the city center.
3. St Regis Abu Dhabi (good breakfast buffet and adjacent to a mall; good for exploring the city).
