It sounds like something was being hidden from
passengers, i.e the catering was not loaded and they decided to just say nothing unless asked or someone decided they would skip the second service which is actually quite important on a longer US flight. As the reviewer says, they got the two meal service on the return but this is another example of inconsistency.
