Time is of the essence on a red eye. Everyone wants food, time to digest and time to sleep. It puts huge pressure on the two crew members to deliver a good service to all passengers very quickly. They are not used to it in many cases (many are reasonably young and new recruits) and the levels of stress can be quite obvious to see.
For now at least, the days of making up 8 beds and having everyone asleep whilst still over Canada are gone.
The poor quality of the preflight dining in the new lounges will exacerbate this trend.
