SFO traffic is still down and there have been very few days with traffic management programs impacting arrivals. There's more of a risk with a delayed SEA departure IMO than the SFO arrival. That said, I'd go with the longer LAX connection just on principle (2:25 is perfect length, plus Polaris LAX). You'll also get an LAX crew, which tend to be the best in the system.
