My understanding is that anyone crossing the threshold of an aircraft arriving into China is up for the current 5+3 quarantine arrangements. So at a random guess they are double crewing the flights, I doubt any airline is going to want to subject their staff to the quarantine process and potential further 'medical treatment' if the staff happen to test positive.

Below is a picture of a quarantine facility recently experienced in China, it's a lottery whether your flight gets hotel or prefab quarantine facility. If you're well connected you might be able to ensure you get a hotel but that's about it.
