Your calculations makes sense on some level but I don't think they offer flat 3000 for 3500 for any length stay. I'm guessing you were doing 10 nights because their standard offer is 300 for 350 credit per night and you need to do it for all nights. So it really depends how many nights you're there for and the calculations would change accordingly. A 5 night stay would only net you at most half of what you mentioned which isn't really enough for that fancy meal...
