Due to the lack of chip-and-PIN, and tipping culture, I think pay at table is going to remain more rare with payment devices. Even when staff ring me up with a clover or toast handheld at my table most just print the receipt for me to sign. I've heard other people don't like pay at table with a waiter/waitress device because with that person standing over them it makes them feel uncomfortable leaving the tip. I don't feel that personally but I kind of get it. And then the approach of some sit down casual chain restaurants of a tablet/payment device per table feels tacky to a lot of people (plus hardware expense) so I don't see a lot of other restaurants doing it.
I've never had them give me a slip to sign when paying at the table, always been a matter of signing on the screen. However, when I actually needed a receipt recently the server had to retrieve it from the cash register area.
