As for the booking in question, the USD price has stayed the exact same as was quoted on my confirmation and was listed on the check-in sheet. I booked on Oct 21, when the exchange rate was about 19.92, and today's appears to be about 19.34. So, the MXN price for $186.42 would be about 3713 MXN on October 21, which is still lower than the 4008 MXN listed on the check-in sheet today. I'll definitely inquire at checkout what rate they're using and how they came up with that. I guess some markup is to be expected, but a 21.49 exchange rate (4008 MXN divided by 186.42 USD) seems way high.
That sounds about right, if I recall my ordeal, unfortunately. They use a higher rate to guarantee they get enough. It's not fair, but that's what they do sometimes. It's never happened at Hilton Hotels in Mexico, at least not yet.

I've actually booked hotels on some Mexican websites to get it in pesos and not deal with conversions. Not sure about USA hotel chains.
