Also, since the currency rate had changed by the time I arrived, the USD amount had changed too. So, maybe go back to the time you booked and see what the exchange rate was and compare it to what it is today in USDs. I didn't fight it because I knew the conversion rate had changed. That's why I hate booking hotels in USD when that's not the local currency because the amounts can change, unfortunately. But, I would advise to get a breakdown on how they calculated it.
Agreed, the fact that "Hotel Currency" still makes everything USD drives me bonkers. I'm facing the same planning for a trip to Istanbul where everything is quoted in EUR for "Hotel Currency" when I know I'll end up being charged in lira.

As for the booking in question, the USD price has stayed the exact same as was quoted on my confirmation and was listed on the check-in sheet. I booked on Oct 21, when the exchange rate was about 19.92, and today's appears to be about 19.34. So, the MXN price for $186.42 would be about 3713 MXN on October 21, which is still lower than the 4008 MXN listed on the check-in sheet today. I'll definitely inquire at checkout what rate they're using and how they came up with that. I guess some markup is to be expected, but a 21.49 exchange rate (4008 MXN divided by 186.42 USD) seems way high.
