In terms of the ATL issue, it is most likely 1:30. For I-D connections, I've usually seen minimum connection times in 15-minute increments (:15, :30, :45, :00), so 1:25 seems odd (again...in my experience). If it is indeed 1:30, there is no wiggle room...the reservation system is programmed to reject the itinerary. IF someone were to "force" the connection, you would not be protected if you miss your connection because it was under the MCT.
Thanks. I saw the 1+25 on the wiki on this site, I could not find MCTs on the Delta website anywhere.

Look for routing options via AMS instead of CDG - there's often a "noon" NCE-AMS flight which can connect to the US. They should gladly reroute you via AMS if you prefer that routing instead.
I checked on that and it looks like in the winter there is only a morning and late afternoon flight.

I believe this was an MCT violation in CDG. Yes, you can request rebooking to any other reasonable routing you can find. If the ticket was booked by an agency, the agency is supposed to do this for you. You may or may not encounter pushback asking DL to do it for you.

Since it is a six-hour difference, I should be able to change for no charge, however, on DL metal to ATL connecting to MLB, there are really no better options. I am now thinking about flying into MCO and driving back to MLB. I could have my original first two flights if I did that.
