*Trying to find the CBP wait times, I pulled a 3 month report from awt cbp gov and it shows no data for Central Terminal CBP between 700-800, but could not find their working hours.

Depends on one's personality. For me this would be an easy connection. Under 2h I would get worried.. And probably yet make it. Specially if you are arriving at 7 am.
