I was on a LHR-MAN flight last year and they started the service from the front as normal but had another trolley moving from the back doing drinks only. And they sort of met in the middle.
I don't think they ran out of anything (and even managed top-ups), but it definitely meant the service was quicker; which with I think a 10-row CE cabin on such a short flight made perfect sense. You're in the air for about 30 mins, I think, and it didn't in any way feel rushed.
