All of economy and Premium economy are served by the same crew from the same tiny galley at the back of the plane. Unfortunately that means that whilst you may get served first at the front, you won't have your trays cleared until the last person in economy has been served (which obviously takes time). Logistical restrictions of the cabin layout means that 2h15 is a fairly speedy service for a full cabin. The galley is door 2 in club isn't a proper galley, and bringing your trays there causes other logistical issues in the tiny club galley at door 1.
Special meals should be served first, and normally if you order a special meal you have to have it as there's rarely excess catering. It seems there was a mix up for breakfast. If your kosher wasn't loaded, you should've been able to choose from the options that rest of the cabin did and not be forced to have what's left (especially a meal with pork in!).
