So... are you saying they bought you off to remove the reviews? I mean did you actually remove them? Was that a condition for obtaining the certificate?
The fact that they are attempting to make it right now is good, but cancelling a customers reservation at 6:35 PM the evening prior, particularly at an international destination, when they may already be in route is just completely and utterly unacceptable and honestly that should be documented. It may not be a full review of the property, but it also may give an indication of how they are going to conduct themselves when there are service failures.
