Unless it’s overnight (in which case you have no choice) the decision is entirely yours whether to remain airside or to land yourself.

In terms of bags, if it’s same day the default is to through check if on the same itinerary. If overnight the default is the same (up to 24hr on the ground) but you can ask to short check if you want to collect them (e.g. to retrieve pyjamas for your overnight hotel).
