I think 4-5 nights in Mexico sound perfect, that won't be a horribly long flight, either from Texas. And I'm not sure if the Pedgregal is all-inclusive (is it?) but if it's not the hotel should be the same price for two people as it is for one, so maybe you could rassle up a companion to go with?
