I will be flying in J from Vancouver, so needing an upgrade won't be an issue, but I'm going to look at connecting to PVG through HKG to avoid the nasty 767. I actually will be spending a few days in Shanghai before going on to Xiamen, so the connection time between the two airports is not a concern.

We did more or less the same thing last summer.
PVG is a bit of a white elephant and immigration can be slow. We flew Xiamen Airlines but not to Xiamen, to a small town 100 km to the north, JJN or something like that.
In Xiamen, make sure you go to Gulangyu. We actually stayed on the island.
