I've had breakfast at the Clubhouse prior to a morning flight. I've not had an issue following Plaza Premium website's posted hours in general.

Under state law, there is no bar service in New York between 4:00 am and 8:00 am (10:00 am Sundays), and, if I recall correctly, VS Clubhouse complies with this requirement.
