Gift card purchases do not count toward the Ambassador Elite annual qualifying spend requirement.
As per the program terms, $20,000 US Dollars in annual qualifying spend based on Qualifying Charges earned on completed Stays alone in a Qualifying Period.

I believe it states Qualifying Charges associated with stays. So I think F&B also counts, may want to try eating in house on any upcoming stays.
