How did you feel about travel into central London? I have meetings near Tower Bridge and was thinking of staying at the Hyatt Place East London because it's a relatively easy walk but the Hyatt Regency looks nicer.

Stratford has plenty of transit links into central London via the Elizabeth and Central lines. The DLR also runs from Stratford into central London. It's not going to be as quick as staying in Central London, and having stayed in this hotel when it was an IHG property, I think the new build HP in East London is probably going to be nicer.
