Molokai - day trip recommendations?

My mother and I are both taking a UA status run to Hawaii. We are going to fly HNL-MKK early morning Sat, rent a very expensive Alamo car, and visit the island for the day and leave on a mid-evening flight back to HNL. I was doing some research on Molokai and it appears that we cannot visit the former leper colony/national park since there really is no way to get down there anymore with the excursion outfitter still a pandemic victim. I think that pretty much leaves driving the rental car on the roads and visiting the beaches, historic sites, and nature vistas. We'll be able to have breakfast, lunch and dinner so any recommendations (pretty limited overall from web searching) would be great as well stop recommendations. My mother is in her early 70s so no heavy trail or long trail walking for her. This will be the final easily visitable island for us in the state. Thank you!
