I don't know if it works for all Hiltons, but I once did not take the physical AmEx card with me relying on GooglePay instead, however, many POS terminals in Europe do not Accept AmEx via ApplePay/GooglePay and require the physical card. The hotel told me that while they could charge the card on file for the stay, they could not use it as a pre-authorization for miscellaneous charges. I had to leave a different card for the extras, however, when I checked out the hotel charged for the stay, including the extra charges that I put on the room, using the credit card on file.
