As for walking to T5 the next day, I did look a bit with Street View and it seems that there are some places without sidewalk and some road crossings that may not have crosswalk. Also, as it will be January, not quite summer weather

We'll still consider, but the lack of sidewalks with roller bags would be a bad idea.

We did a recent stay here, both came and went from T5. I say this as a lifelong runner, health and fitness enthusiast, and someone who also walks a lot when traveling (my wife and I walked ~10 miles per day on this very trip), I would not recommend attempting to walk from LHR to the Hyatt Place, no way, just not worth it with roller bags, etc. Weather has nothing to do with.

As recommended in this thread, we took the 423 bus from T5 both to the HP and back, using Apple Pay on our phones, so thanks to those that shared that info it was brilliant, easy, and efficient.
