One True Crab Beehoon is served at Sin Huat Eating House, Geylang Lorong 35, smack dab in the middle of Singapore's red-light district. Open-air kitchen, red plastic stools, service with a snarl, the highest prices in Singapore ($36/crab, serves 2), and expect to wait at least 40 minutes as all dishes are made to order... but it's worth the wait.
