... UA doesn't offer any service from HNL to either of those countries. And UA already has a Pacific hub at GUM (although GUM-LHR is infeasible due to the fact that it'd fly over Russia).

HNL isn't a much better alternative for ANZ-UK flights than SFO -- it's only a couple of hundred miles shorter. And I'm not sure UA is looking to cater to UK leisure travelers with a flight that probably requires a 789. LHR-HNL is a very expensive flight to operate, because not only is it an ultra long-haul flight, you have to use a very valuable LHR slot to fly it.
