You will not be able to move to business class since you and the infant will be in economy. If you are happy to travel in different classes, you could have 1 in business and adult + infant in economy - but you won't be able to get the infant into business class unless you have paid for business class for the infant

You say you are not trying to fly for free , but you are trying to fly business class without paying for business class
