Yeah, that's it! I even recall during my childhood these were even referred to as
yau-cha-gwai (literally translation, "oil fried ghosts"?), and no idea how that came to be so commonly used. Of course, if it isn't fresh, I'd complain and ask for a fresh one or a refund. Ideally, I'd prefer them about 30 - 60 minutes after frying.
