I am obviously not the target market. I love leftovers so will usually will cook too much of something so I can get 2 or even 3 days out of something
Yeah, you don't get it. The point is they do the recipe planning and send you everything you need. The recipes they send are things I would never think to cook at home for myself (last night was kefte spiced meatballs and a spinach and grape salad with lemon dressing and dukkah), and they send everything you need. Otherwise you'd have to go buy some large container of something and only use a little of it for the recipe. So I get more variety, making things I would ordinarily not even consider, and I get the convenience of getting all the ingredients I need in the quantities I need. It removes the thought from "what's for dinner?" so I can just make something. Same reason I like going to Orangetheory to work out: I just do what I'm told for an hour and get a good workout. The other reason, more unique to us, is that Mr Gfunk has this weird aversion to leftovers ("it's food that you didn't want the first time around. It's left over, so why would I want it later if it wasn't good enough the first time?" and I just roll my eyes) and this means he doesn't have to slum it by eating something he's seen before.

Cooking for myself, I'd make a never ending succession of the same five things over and over. That's the value for me. They do pre-prep some things but that's not the point (though you can get recipes that are almost 100% pre-prepped if that's what you want).

That all said, I paused our Sunbasket subscription for a few months to give ourselves a break. I think I'll start making recipes from Jacques Pepin's Fast Food My Way and its sequel, both of which are chock full of tasty things that take 30-60 mins to make. And Mr Gfunk will just have grit his teeth and eat leftovers.
