I think there's one at each emergency exit too. I was on an A321 ceo at the weekend (the ones with the exit row at 9/10) and CE went to row 11. There were CC making the demo at row 1, row 9 and then again at row 12 just behind the curtain.
If, on the A321ceo, the cabin divider is betweeen row 11 and 14, then one crew member stands adjacent to the second exit pair and another stands at the curtain. The other two stand as normal at the very front and at doors 3.
On the 321neo, similar applies however the crew member stands approx halfway between row 1 and the curtain (as there is no door 2).
