Prices are normally legally set in the local currency. although some countries tend to be exceptions and sometimes prices will be set in a more stable currency (if permitted) during a period of hyperinflation.

However, in deciding what to charge (and what special rates and package plans to make available), hotels look at what their competitors are doing and also consider the cost in the currencies used by their likely clients.

During the pandemic, some hotels seem to have displayed a crazy attitude that they can charge lots more to make up for their lost revenue. It doesn't work that way.
