I think the OP means they if they enter CDG and the Schengen zone that evening by the time they leave will have spent more than 90 days in a 180-day period. Thus overstaying. By waiting until after midnight they will be at exactly 90 days when they leave.

For the OP I have no suggestions as based on my travels there is no where to "wait" after exiting the airplane and milling about for three hours would draw unwanted attention. I would probably work on changing my flight.
