I currently use two SIMs when traveling (though since I have an iPhone 12 its one physical, one eSIM but the logic applies)
eSIM: my main T-Mobile number
Physical: EU pay as you go SIM with a data bundle.
This way I can receive (and make but I don't usually do that) calls made to my regular number (family, work -- when I had it

) and use the EU SIM for data. I can also make (and receive) calls using the EU SIM which is nice if you need to call a local business.
A few years ago the Physical SIM was T-Mobile and I used a data only Ubigi eSIM for data. That worked as well
