Amextravel.com lists quite a few onsen ryokans on its website. For example, Mt.Resort Unzen Kyushu Hotel, reviewed above by the OP, is listed and you can even pay with Membership Rewards points (40k points/night, or $313/night [room only, no board]) on some weekdays. Even the highly popular Ryotei Hanzuiryo (mentioned by OP but not reviewed) in Unzen, Kyushu, is also listed on the Amex travel sight but it is extremely difficult to book due to high demand. Also, you can book Mr.Resort Unzen on the Chase Ultimate Rewards travel sight using cash or points. It shows as $313 for room only, $359 with breakfast, and $467 for half board, but you can use points too. With the current USD to JPY exchange rate, now is a great time to book.
