Any advice for a high end traditional sushi experience in Tokyo?

We were fortunate to have lunch at Sukiyabashi Jiro in 2019, but were left underwhelmed.

​​​​​Definetely will explore many sushi options in the city, but want to book at least one of the city's more sought after restaurants.
