Same deal - instead of loading onto the Starbucks account, I loaded on my CFA account for future uses. If I am not mistaken, CFAs at airports don't work with the CFA app. (that said, if you used those vouchers if the airport had CFA, it would work, but you do have to feed all of the information of the digital credit card to the cashier).
The food vouchers came in as digital credit cards, with all of the information like card numbers, expiration dates, total available amount, etc. As long as the purchase is through a food establishment, I don't think you'd have to use them at the airport. This is with another airline; I don't know how the they are like at UA, sounds like paper vouchers are still being used.
