Seems like that would be a self fulfilling prophecy ... whatever flights the experienced FAs prefer would be the ones under high demand so only experienced FAs would have the seniority to get.
There was quite a poignant Mentour episode where he described a trap new pilots and I suppose cabin crew often fall into. When they're young they join up envisioning international flights and overnights in exotic locations but don't have the seniority to actually get assigned those routes. Then later when they have the seniority their lives and priorities have changed and they just want flights that let them spend more time with their family.
