You can definitely get points while staying at the hotel -- you just have to explicitly run the restaurant charge directly on your Hyatt credit card -- and the server has to know how to do this properly.
I have real data points. I've done this at both Watertable in HB and Ember & Rye @ the Aviara. The restaurant points show up almost immediately after eating -- well before hotel checkout. They show up as a zero-night stay with 3x points.
