Obviosuly you had never been in Aviancas's 787. Seats are well maintained and as clean as those of big US based airlines. Cleaning of the aircraft beetwen flights is not crew but external companies.

I am United 1K and these days on flights to from Colombia get free upgrades to bussiness. I still prefer to pay triple what I pay in United and fly flat setas from Bogota to Los Angeles in Avianca.
Believe me food onboard and drinks in bussiness class are no important. Spending 5h in recliner is not something plesant and 787 is much quiter than 737. Those two things make your flight less impactfull to your general body and mind conditon.
Finally comparing airlines with flat seats to those with recliners is like comparing food in upscale restaurant (flat seats) to McDonalds and saying that McDonalds is better as you get sodas refill for free.
Fliying is about getting from point A to B in most comfortable way. Food and drinks does not chnge how comfortable is yiur seat and which plane is better for long flights (787 wins with 737).
Finally Airlines are changing and bussiness class unbundling would happen sooner than later. Ofcourse airlines flying recliners would still offer drinks and something more than sandwitch. Those with flat setas would ask extra cash for additional services.
