i once did this by buying a fully flexible/refundable ticket on Air Canada for 6 months time if I remember (I think at that time they were fully refundable with no penalty at all). Then I didn’t t cancel the ticket until I had spent the same amount as the price of the ticket on my Amex card several months later so that I was still over the threshold.
