The Air Canada online vaccine processing system has flaws. The error message you're seeing is very similar to what I encountered on Friday. It's a pain, but it is what it is. No one on Flyertalk can fix that.
I don’t recall asking anyone on Flyertalk to fix anything, I asked if people had issues boarding their Air Canada flight if they had mixed vaccination doses. Neither Air Canada or the Dutch travel “hotline” could answer my question. I hadn’t been to the Netherlands in almost twenty years and was rattled when the system told me I needed to provide a different vaccine certificate.
Thank you again to all the above Flyertalk members who weighed in. It greatly lowered any travel anxiety yesterday. Full points also to Air Canada and their excellent Signature Suite lounge, what a great way start to our trip.
