An Iberia Express flight is essentially the same as an Iberia mainline flight when it comes to the customer experience, with the sole exception being widebody flights to/from LHR. If there were to be a cancellation of a reward flight booked via BAEC, BA would endeavour to fully refund you, reschedule or reroute you. They usually try to only permit rescheduling where there is award availability though theoretically, as per UK/EC261, you should be rerouted or rebooked regardless of this, though this may require HUCA a couple of times to achieve the desired result.
I haven't been on an Iberia Express flight since pre-Covid, after they stopped flying to Birmingham. However, the food in their business class then was much worse than on Iberia Mainline, and that's compared to standard narrow-body shorthaul.
