Went to Bologna three years ago. I found the quality of food in the city to be high, anf with relative fewer tourists (and more students) than many other places in Italy, less danger of ending up in tourist traps.
Just go for menus in Italian, pick the local dishes and be prepared for a lot of meat, cream and cheese. Also try the Gelato, Bologna has a place or two on the Italian top list of best Gelato places (I believe one is close to one of the leaning towers in Bologna)
