You're right, it shouldn't happen with the iPad, inventory check and pre-ordering.
However, that's just what happened to me. On AF682 from CDG to ATL, they served the A350-900 from back to front of J. I was all the way up in 2A and when they got to me, they apologized, stated they ran out of the beef cheek and asked if I'd be happy to select another option.
I looked at the menu, but expressed that it was a bit perplexing given the pre-ordering. After a check, she stated that they had crew meals, which were the same and if I'd give them 20 minutes, she would get the beef to me.
I thanked the flight attendant and accepted. In the interim, she brought the cheese plate while I waited and they eventually got the beef entree to me after about 15 minutes. I thanked her and appreciated that she made it right. They treated me quite well for the rest of the flight and made a potentially bad situation good. I definitely appreciated their effort.
