If you're looking for Jiro-style sushi, I highly recommend Sushi Mizukami in Hanzomon. The chef-owner trained at Jiro Roppongi for 20 years. He is excellent and one of the best chefs to have come out of Jiro apprenticeship. PHT concierge should be able to secure a reservation for you.
