In the past, there was an app called "In the Air" that would tell you the specific menu on the flight. Not sure if it's still working or if the feature has been integrated in the main app.
In any case, the AF attendants with the ipad (e.g., on the lounge, or on any other flight) can check the complete flight menu upfront - so you can ask what you will be served on that flight, and I think they can also select the meal for you if you didn't do via the app. Beware that some of them may not know it, but it's definitely possible, even checking meals on medium/short haul flights.
In my case, I would respectfully disagree. Flew in J, CDG-YVR, late July. Was given the following pre-selection options: 1)braised beef cheek, 2)roast poultry, 3)pollock with seaweed, lovage sauce, and 4) provence-style artichoke. I selected the beef, only to be told during the meal service that they had run out of the beef! Huh? What good is pre-selection then? I then requested the pollack, and was given the vegetarian option. No, I would like the fish. Only then was I served the fish which, as it turns out, was quite dry. Not exactly what I'd expect on
AF out of CDG. I will say, however, that the duck shepherd's pie for the second meal service was excellent.
