Out of CDG, you usually get the best of what AF has to offer. I would honestly go for Beef or Fish.
In the past, there was an app called "In the Air" that would tell you the specific menu on the flight. Not sure if it's still working or if the feature has been integrated in the main app.
In any case, the AF attendants with the ipad (e.g., on the lounge, or on any other flight) can check the complete flight menu upfront - so you can ask what you will be served on that flight, and I think they can also select the meal for you if you didn't do via the app. Beware that some of them may not know it, but it's definitely possible, even checking meals on medium/short haul flights.
