Most caviar used by airlines these days are the farmed versions from countries outside Russia, mainly Italy, Germany and sometimes even China.

It could probably because of a supply chain issue.

If the quality of the caviar isn't good enough to consume straight up, it would usually be only used as garnish on certain appetizer / sashimi dishes.
