I've stayed in lots of airport hotels that have full bars with all of the "standard" liquors and sometimes a few local beers on tap.
If you're looking for one with a finely curated wine list, it would probably need to be in a wine-producing area. I haven't paid close attention to airport hotel wine lists.
If it's a true airport hotel (as opposed to a higher end place that serves the city's guests beyond just those traveling the next morning), I would not expect anything terribly unique. It used to be that Le Meridiens and Renaissances had a little more artistic flair and maybe had better-than-average cocktail bars but I don't have high expectations these days.
